Namaste, I am Babita Shrestha Moreland.
I am a culinary artist from Nepal, living my country life in Lexington, Kentucky. I am a plant-based chef, food photographer, and graphic designer, as well as the author of two cookbooks: "Plant-Based Himalaya: Vegan Recipes From Nepal" and "Garden Exotica: International Plant-based Fusion Cuisine."
My love for food began in Nepal's Terai region, where I learned traditional cooking from my grandfather and mother, a skill that blossomed into a lifelong passion. After moving to Kathmandu, Hong Kong, and then the United States, my world expanded. It was here that I began exploring the world of art, eventually graduating with a Bachelor of Fine Arts degree from St. Cloud State University. In 2016, I moved to Lexington, Kentucky to reconnect with my sister, and I started Vegan Nepal with the purpose of selling fresh, delicious plant-based food to the community through my pop-up, where I offered dumplings, vegetable fritters, and a Nepali Set.
Driven by a love for exploration and a desire to reconnect with my roots, my husband and I returned to Nepal in 2020. We decided to live in Pokhara, the city of lakes, well known for its beautiful weather, flavorful local produce, and mountain-side living. Drawing inspiration from my Nepali roots and global experiences, I create innovative plant-based dishes that bridge cultures and tantalize the senses.
I am a mother to my wonderful daughter, Saraswati. I am also a passionate advocate for sustainability, local food movements, organic farming, and a teacher of plant-based cooking classes. Book an online class with me to learn a new recipe.
